lisi I want to say you are still OK, but right on the boarder. Keep them in the refrigerator & eat them quick. Just to make sure, perhaps Jonathon or Austin maybe even processhead or someone can join in that has lots of experience with stix & get more information from you & provide more detailed information, just to be on the safe side.

What if we freeze them after cooled down? Then take them out in small batches and eat them right away?

If the seasoning you added had salt in it, I would say you are probably fine if you kept your ingredients refrigerated after mixing and stuffing them. Adding cure is usually preferable, but the salt in the mixture also has preservative qualities, and your cook schedule sounds satisfactory.
It would be a good idea to freeze until consuming them.
Probably safer than eating a hamburger cooked rare. -

I would say they are still safe to eat, but treat them like other cooked, non-cured products. Like if you cooked hamburgers and put them in the fridge for leftovers. They’ll stay and keep fine for a few days, but you wouldn’t want to eat them from the fridge a month later. Freezing would be best and then thaw as you eat them. -
processhead we used Willie’s snack stick seasoning we got from waltons…so I would think there is salt in there…but not sure.

Yes, Willie’s seasoning would have salt in it.

lisi Yes, Willies has a fair amount of salt in it & if I remember correctly, MSG too. There again, I think you will be fine, so long as you refrigerate them & eat them fairly quickly. I would say within a week. If you made a whole lot of them, it looks like the freeze & thaw in small batches will work well too. Let us know how everything turns out.

I am glad that people share their misadventure because it becomes a wealth of information. Still an edible product but has the be treated as cooked and uncured

Austin beat me to this but yeah, safe to eat, just treat them like fresh meat.
