No picture, but I made 25lbs 1504xs sausage using 50% wild turkey breast, to 50% pork butt. Fantastic! I especially enjoy feeding it to my mother in law who “hates” any wild game, and swears she can tell if a dish has game in it. I know, I’m wrong, but it’s fun!

Looks great. I’ve never used the cellulose casings, what is your opinion or pro’s and con’s? Does smoke flavor penetrate? I’ve only used sheep casing on my dogs.

Bigbass68 Those are some serious looking dogs. Looking forward to your responses about them.

Been curious how those casings would link. Bought some a couple years back and still haven’t got to them. -

PapaSop They link really good as long as you are careful not to overfill them. I had never used them before when I made my first batch and filled them a bit tight. Had a couple slide out of the casings in the water bath from casing breaking at the twist and ties… They are pretty durable though.

PapaSop first time doing European twisting on hot dog…I do it on fresh sausageall the time
. -
Going to try my hand at dogs very soon hope they look as good as those…
