A friend and I bought the 12 ginger and 50lb mixer have made 2 50 lb batches of potato sausage and have had no problem

I’m sure that Walton’s has a 25 lb mixer that comes with a hand crank or hooks up to their # 8 meat grinder or the like.
I have a tilting L*M mixer that has a hand crank and hooks up to to a #8 meat grinder. -

Deepwoodsbutcher Update on 50# mixer. I finally got the time to use the mixer and I just can’t say enough positive things about the mixer. I did two batches both a little over 15lbs and the protein extraction was phenomenal to say the least. The spices and liquid were distributed very quickly and evenly.
I found that just as Jonathan said in the video when you tilt the pan >98% of the meat was emptied into the lug with just basic scrapping of the side walls and paddles to finish the process.
Clean up is a breeze, take off 4 wingnuts and the pan separates from the stand. The paddles come out with just a simple turn of a knob. It’s just as easy to put back together and get another batch going.
I don’t know what the true minimum is because it had no problem at all with my batch size, I never once had to push any product back down it all got mixed. This is a real mixer that surpassed my expectations, so if you are contemplating getting a mixer don’t hesitate to buy this model it’s a winner.

I made this mixer powered by a drill to mix 20 lbs of meat in a stainless pail. Cleanup is easy and the drill lets you know when the extraction is perfect. This amount is about right for my smoker that is natural gas heated as using propane was too hot and I couldn’t get the temperature low enough to start the smoking process. To load the pail I put in alternating big spoons full of moose and pork and the spices with water. By the way I tried using rigs for mixing paint and drywall mud but meat is very fiberous and plugged up. If you don’t know how to silver solder check with your octaginarian friends -
Brianzipperdog123 This is using your imagination to accomplish your goals! Glad you found a good solution. I’m going to be part time commercial, so the tub version is a good option for my shop, but yor idea would be a great solution for home use. Thanks for sharing.

Deepwoodsbutcher I have the same mixer as Walton’s 20lb mixer. I’ve used it for 6 batches of 12 lbs each now. REALLY like it! As others said, mixes great and very easy to clean, I’m impressed with the engineering on the paddle quick release etc. And Walton’s has a good price on it! $150.
However, I would recommend you their 50lb version for sure since you said you would be semi commercial. It is the same paddle and meat hopper, just taller sides, at least visually in pucs showing both. So should be able to clean in sink about as well.
But two real advantages.- Can hook up to grinder, that is HUGE. If you’re doing larger batch, commercial, ensuring complete and consistent protein extraction is critical. On grinder, you just set timer and go. By hand…you or your employee is gonna be tempted to quit early, 10min hard mix on 50lbs meat is Swarzenegger level.
- The gimballed tub allowing easy meat dump is gonna really keep your process smoother and cleaner.
I looked at a ton of mixers online, this one really looked tops to me.

Ps, no way to hook the 20lb grinder to a mixer, called yesterday to see if 50 lb parts were compatible so I could jerry rig it, nope.
