Eye round sous vide for 18-24 hrs. at 130 deg. then seared is excellent. It comes out tender the flavor is great.

John Belvedere That does look good. I will say I’ve done a very slow smoked eye of round and then chilled and sliced (near shaved) on my slicer for good deli roast beef sandwiches. That said, when I do same with a sirloin roast it is much better

John Belvedere Excellent use of sous vide. Eye of round is the perfect use of this method. Takes a tough meat and converts it to omg. Way to go.
