My condolences to the family.
What kind of temperatures can you hold in that big smoker? Also what are you using for burners? A few pictures of the inner workings would be appreciated if you can see your way to take them. -
I’ll post pics tomorrow, but it’s basically a lp burner that’s rated at 270,000 btu, I’m holding at 205 for the last 5 hours… and it’s set pretty low, could get up to 400 if I ever wanted to, but it’s smoking not grilling lol

More power! As an electric smoker guy, I think in watts when I deal with heating power.
For a reference point, when your burner operated at its rated output, its equal to 80,000 watts. That’s probably more energy than your home uses when every electric appliance is running at the same time.As you said though, you are running it at low flame right now.

processhead ya I had a smaller burner but it struggled to keep at 200, so I went big time lol
