Hot dog “fix”

So I have trouble when using cellulose hot dog casing keeping the hot dog twisted when going in smoker. Came up with an easy solution-little more time, but comes out with the traditional hot dog look. Just a quick wrap with bread twist ties

Thanks! I did a coarse grind, then ran it through 3 additional times on a 3mm plate

nicholls47 thx! I wanted to make hot dog consistency sausages, but didnt want to food process it all. I like a tight grind and bind on a lot of sausages I recall from being stationed in Germany. Thx for your tip!

Had to look back at some old posts. Parksider had some success with linking but only if you did it in the shape of a globe. His other way, twist ties. -

nicholls47 That’s exactly what I do, 1 course grind then 3 times 3mm…I’ve never done an emulsified hot dog but this way does the trick for me !!!

Seems to be pretty close to emulsified as you can get! Sticky stuff!

DUDE!!! I’m going to use this!!! My only concern is how they would hold up in the water bath finish. I usually just use the multi twist making 4 dogs at the same level.

Check out some old posts from Parksider . He water bathed everything.

There was no problem w them holding up-worked perfectly!
