Snack Sticks with beyond burger?
-
So as un-natural as it sounds, I would like to use beyond burger to make snack sticks for some vegetarians I know. Has anyone ever tried this or have any ideas how you could do this? I did see in a travel center store recently both beyond jerky and snack sticks. Any help would be appreciated.

Sincitylv Don’t know how well it would bind. You would have to experiment since the unknown is the fat knowing it is vegetable based and getting protein extraction. I would say make a small batch and see what it does, I would say use sure gel but it does contain whey which some vegetarians object to, you could use carrot fiber as a binder. Go for it and let us know what happens.

I wonder if there would be an issue with the preservatives that are put in those darn things already. So Id really look into that before using any sort of premixed seasoning that is made for snack sticks. I mean isn’t a carrot the original snack stick!!!

Sincitylv I have tried it and it does not work. The beyond, bocca, or any other type of imitation meat I could find will not bind properly during the mixing process. The only way I can think to do it would be to replicate the making of it and get to it before they “cook” or process it. Once it is processed that is the structure and it can’t be changed. I tired adding extra either Carrot Fiber Binder or Sure Gel Meat Binder and it did not work at all. Crumbly wasn’t even the word for it, it was like it had no bind at all.
If you come up with something that works we’d be super interested!

For your edification I hope you figure it out and it turns out well. But the devil on my other shoulder since I hope it turns out like c**p and you explain to the vegetarian “that is why we eat meat”
Full disclosure, my lovely wife makes amazing vegetarian dishes that we eat often -
Departing Contestant I have to agree. A vegetarian thread on meatgistics makes me uncomfortable lol.
Seriously, though I hope you find a way to make the product you are after. -
Try using miso paste as the binder
