24lb batch of Smoked Walton's Special Blend Bold Jerky

A neighbor/friend asked if I’d make them some jerky as mine is their daughter’s fav. Always happy to oblige! Figured I’d do a big batch to split with them.
Meat was eye of round roast from Costco. Expensive at like $4.69/lb but only trimming needed is to remove small piece of fat cap they leave on. Sliced on my Globe G12 on the “8” dial setting which is fairly thick at 1/4" or so.
Mixed the bag of Walton’s Special Blend Bold Jerky and cure with 6 cups of water. Just barely fit in this 12QT container. After a day, I pulled it all out to mix up a bit and added 2 more cups of water as most had absorbed. Left another day and currently smoking first batch at 160F on my Pitts & Spitts Maverick 1250 using Lumberjack Comp Blend Pellets. My PK100 is currently loaded with a batch of Jalapeno Cheddar snack sticks so will likely have to do another batch of jerky tomorrow as well. Busy day!
Question on this seasoning mix: Is there anise in it? Picking up that scent in it but not sure if it is instead a pepper or something.

wow nice looking jerky !! , i have read on here that most people slice theirs 1/4 inch , i always sliced mine about 1/8 inch

calvin I guess yours will cook faster but will take up twice as much rack area. I like the thicker finish - also leaves a little more room for error on drying out.

i don’t have a slicer so its far from a perfect 1/8 and it does make for some dryed out pieces but yours looks great

$4.69 lb might seem high, but when you consider the price of good jerky at about $36 lb (not the big box store bought junk), the price is very reasonable, even after shrinkage. Looks great!

Might have to make some jerky, got a store here having a meat sale. They have whole eye of the round and tri-tip roast in the bag on sale for $3.99 lb., bottom round for $3.49 lb. and pork loin for $1.69 lb. They should all be Cargill products, that is generally who they use. We’ll see how they look before I stock up.

That’s some great looking jerky. 24 lbs. is way more than I want to do at time as it would take me several days with my small electric smoker.

Well here we are on smoke day #2. Yesterday the PK100 was loaded with 25lb snack sticks so could only use the P&S on jerky. This is rest of batch and a few snack stick off cuts that wouldn’t fit yesterday.
