processhead Paul, have you ever used a Chiefs Choice? That is what I have. I have seen the Work Sharp and another model that seems to be popular something Ken Onion edition. But I settled on the following. I still have another one that is a 20 degree, it is a large number of years old.

Denny O I haven’t used the Chef’s Choice but they look like a good sharpener with nice features.
From what I can tell, the Ken Onion edition of the Work Sharp tool is just a heavy duty version with more features, like variable speed, and a couple of more abrasive options with the belt selections. The basic design is pretty much the same though

processhead I have one of these and it works very well, then I got a Tru Hone and only use my work sharp if I am traveling for hunting.

processhead I have the Ken Onion and it does a great job on my very mixed bag of blades and required angles. Also have the Elite system add-on for it which allows more of a free-hand use but have not yet tried it.

Denny O I have this one at work, Chef’s Choice 120 Sharpenerand while it does get knives extremely sharp, I don’t really like it. I think it takes a lot of metal off of the blade, and I seem to jam it up when pulling the knife through. The later is probably just my lack of experience using it.

processhead I got a good deal on two of them, sold one to a friend who raises his own beef and hogs and processes them with friends and family. He was thrilled to buy one when he found out what I got them for. There is nothing wrong with the worksharp though, it will put a nice edge on your knives.

Tex_77 My old one is the Chef’s Choice 120 Sharpener, the hone wheel on one side got a little funky so I replaced it with the Trizor 15. I never use the 1st stage only one or 2 swipes on the 2nd stage alternating on each side. Then maybe 4 to 6 on the hone then to the steel a few times. I travel about one inch per second and with little to no downward pressure. My kitchen knives are carbon steel and near 40 years old. I do not acknowledge wear if there is it is minimal for their age. I felt like the Work Sharp had courser grits and was harder to hold angles steady.
bocephus Wish I was your close friend back then!! I’d love to own one of those “Tru Hone” but for over a grand it ain’t gonna happen!
