Looks like I’m going to learn how to make sausage. Walton’s just clipped me for $675 thanks in part to their Summer Sale. A new #22 grinder and 20 lb meat mixer.
I am new here and new to homemade sausage. I have always been a lover of sausage, particularly Breakfast and most German varieties. I have a smoker and several grills and love cooking on those, even in the snow. I’ve had an inch of snow on my smoker before while cooking a brisket. Lately I have been watching lots of YouTube videos on how to make sausage and look forward to learning here and making some righteous meats!

Sounds like you are well on your way in terms of equipment. If you plan to make sausage, I would recommend investing in a stuffer as well.
Also, read all you can on the subject and ask questions here as you go along learning about making sausage. -
TheBandit Well, you’ve found the proper place. Like processhead said: next up is a stuffer. But, maybe before you do that, there are many videos on making sausages, types of casings and other ingredients you will need to review to get up to speed. After you’ve seen a number of them, then you can start asking/searching for all the answers and enjoying the journey. All the people on this site want you to succeed. Welcome to this community.

TheBandit Welcome to the club and community. A stuffer is now in your future. You can stuff from the grinder but won’t be happy with the how slow it progresses. There’s lot of people here willing to give help and advice. We also have been on the buying end too, most of us have lots of equipment our wives wonder where it came from.

Welcome!
Yep, I bought my #22 grinder and 20lb mixer, and went to town making sausage too! After 1 night of stuffing with the grinder, I ordered a 15 lb stuffer immediately! Now, I would rate the stuffer as the #1 most critical piece of equipment, followed by grinder, and last mixer. You can do a lot with preground beef and pork. And nowadays I use my 6.5 qt kitchenaid mixer for small batches, way faster cleanup
Stuffer… I’d make sure it can do snack sticks thru a 10mm or 12mm tube, not all are rated for that.
Glad to have you with us!

Like Tex said, just the beginning! Dave is correct as well. I went 2 years using the grinder to stuff both summer sausage and spice sticks. After I got the stuffer I was just starting to stuff when SWMBO came home and I hollered at her to come quick!! SWMBO came quickly and I told her to get her catchers mitt on because here they come in 17mm casings! WOW was that easy!

TheBandit You found the right place, this is a great community, with helpful members, but fair warning $675 is just the beginning.

Thanks for the warm welcome, and the advice on getting a stuffer. There are so many out there, I just couldn’t find the right one. It is going to take a little more research.

TheBandit 11 lb Sausage Stuffer this is pretty much Walton’s gold standard stuffer, it will do pretty much any thing you need to do stuffing wise. You might also check out this link for my personal recommendations: Tex’s Top Picks

TheBandit I agree with Tex_77, the 11 lber is a great stuffer, I upgraded from a 5 lber to the 11. The advantage of the 11 is it is still a smaller diameter cylinder so it does a great job with snack sticks as well as regular sausage. If you are going to do larger batches you might want to look at a bigger stuffer.

One of the first things the guy that gave me a recipe for his fathers store that made sausage was get a stuffer when you buy your grinder the grinder will do it but you will lose interest because it is so slow so when I bought a grinder I got a stuffer and after I mixed my first batch by hand I got a mixer glad to have you here it is a great place to learn
-
TheBandit you can rest assured that any of the equipment you buy from Waltons is quality equipment I have had stuffers from different various companies and nothing produces the sausage like the Waltons Equipment. I have a 32 grinder a 20 pound mixer 11 pound stuffer and a slicer. You have a new wonderful hobby.
