Do I need to add Sure Gel when I’m making ground jerky? Is it that necessary or recommend? Any thoughts? Thanks
GI Joe 1st, awesome name. 2nd you dont need to add it. You can add it, I want to come out more strongly against it but I can’t articulate why right now. Its not carrot fiber, so it isn’t going to hold more water so that’s not it. It will help keep everything bound together which you do want…
Maybe it is because it is milk based? Powdered milk technically does go back, it is years long but it does. Either the way, the answer is no you don’t need to. Though, at this point I kinda want someone who has done this to jump in on this thread to tell us if worked or not. I will try to make some in the next few weeks and see what happens.

GI Joe I confirmed with people here, you can add it, but we don’t recommend it. It is going to retain more moisture than you want, while it isn’t going to hold anywhere near as much as carrot fiber, it might be enough to cause some issues with the drying cycle of your smoker/cook.
