Sanitizing Help

    All of the videos and recipes have a step to Clean & Sanitize your equipment and work area. Walton’s has a video on cleaning, but I cannot find anything sanitizing.

    What chemicals are used (bleach, Star San, etc)? What is the process? Are no rinse sanitizers allowed?

    TheBandit I use StarSan after cleaning with soap and hot water. Whatever I can fit in dishwasher for heat antibacterial cycle, I do.

    You can use no rinse sanitizers like StarSan, just spray it on and let it dry. It is a standard in the bar industry, also used for brewing. Ive also used iodophor. I keep a spray bottle mixed up at the recommended dilution. I do rinse all my gear off with water again right before use, but probably don’t have to.

    TheBandit Bleach solution works but can leave an undesirable residue for food contact.
    Starsan at the proper dilution makes a good no rinse-spray on sanitizing solution that leave no undesirable residue like bleach.

    I have both Starsan and Iodophor due to my brewing, but I use Starsan with my meat equipment for the most part, if I grab the Iodophor spray bottle instead I will use it just the same.

    I also used to Homebrew. I started with mild bleach solution but eventually started using Star San to sanitize. I know Stae San is a preferred sanitizer for the brewing industry, I was trying to find out if there were specific sanitizers used in the meat industry.

    The Walton’s product that Tex_77 suggested is interesting. I wish I knew the manufacturer and could read up on their literature. IRL I am an engineer and find manuals a great source of information.
