There are a couple of processers around that make course ground hotdogs. Just wondering if anyone has tried to make there own and if anyone has any good recipes.
In all honesty, neither my kids not myself liked them They seemed dryer than usual for some reason. May have been a recipe I should have experimented more with, but we switched to a 4-5 times grind. The course grind sure would make the processing a bit quicker.
Sydik Farms corse ground is not my preference. I usually grind 3 times then run batches through the food processor till I get a hummus looking product. I made 20 lbs last month and have one pack left. I use the wLtons hotdog baloney seasoning with a lite smoke and sous vide finish.
