Elsos I am the leader of team blue and Austin is the leader of some other team…cant remember what! It all stems fro when we bought some new hats and I liked the blue one better and he liked orange, people got into it and we decided to create some teams. It is a fun distraction!
Jalapeño popper sack sticks
Has anyone tried using the jalapeño popper brats seasoning and making into snack sticks? The brats came out awesome, have some venison and want to turn into snack sticks. Wondering what ratio of meat block to 25 lb. Seasoning to adjust.
I usually use 1/3 pork and 2/3 ground venison. Processor does add beef fat to my ground venison so may change your ratio if no fat is already added

Snacks I would use whole bag for 25 lbs. Snacksticks are usually saltier and more flavor than a brat.
Brats are 1.7% salt usually, so using whole pack in 15 lb meat gives 2.8% salt. I make bacon at 3% salt, costco is 5%. I make Canadian bacon at 2.5% salt, and ham at 2%.
Slim Jims ate 4.0% salt.
That gives you some bumbers to guess how salty you want your snacksticks.
