Dave in AZ I have thought about it and would definitely love to get that flavor profile in a sausage. I fell in love with Korean food many years ago when Uncle Sam sent me for a visit.
Meat mix for Buffalo Wing Flavored Snack Stick
I have some Walton’s Buffalo Wing Flavored Snack Stick seasoning coming and I am not sure what type of meat mix would be recommended. Has anyone tried using chicken thighs in a snack stick? Can or should you use chicken in a snack stick or should you stick with pork or pork & beef?
OleSmokey i did the buffalo wing sticks with chicken thighs and breast also added pork fat and high temp mozzarella to the mix. It had a good flavor but if I do it again I’ll over season, it was very mild.

Miller If you are doing chicken thighs, use the chicken skin for the fat.
OleSmokey If you are wanting to do chicken, use thighs absolutely. However, I recently found an old batch of Buffalo Wing Snack sticks I did out of beef with mozzarella cheese and OH MY GOD they are amazing.
