you might just try a small file to enlarge the center a little if it is close and if a file won’t cut it try wrapping 100 grit cloth sandpaper on a piece of small square stock and see if that will enlarge the hole

America’s Test Kitchen recently released another round of testing on inexpensive chef knives, less than $75, and the Victorinox 8in chef knives is still the long running winner. Walton’s has this knife available here Victorinox 8" Chef Knife

Tex_77 Thanks for the info. It’s really hard to find a GOOD quality chef’s knife at an affordable $$$.

I’ll second Tex_77 on those knives. I have four plus six steak knives. You won’t be disappointed. I also have the Kapoosh knife block but not seeing it in their inventory? -
I have their 8" chef’s knife, 6" “utility knife”, 4" paring knife, 10.25" bread knife, and the 12" Granton slicer, all with the Fibrox handles. I probably paid a couple hundred bucks for all those together, and I’d do it again without a moment’s hesitation. I first got the chef’s knife about 15 years ago, and I was immediately sold. It darn near made me want to toss my set of Henckels in the garbage.

TexLaw I have a 2 boning knives, and two serrated knives from them as well all top quality, and all sold by Walton’s!
-
Tex_77 I bought mine before I ever knew about Walton’s, or I likely would have gotten mine here.

I have had my set of 9 Victorinox with Rosewood handles for 40+ years and obviously love them them…I have to take of the handles every now and then but worth the effort !!

Tex_77 They are definitely winners!
