Jonathon Austin I’d have to say its a toss up between Walton's Complete Turkey Cure and Soluble Turkey Injection they are both very good and completely different taste profiles.

Waltons complete turkey cure. Two day brine after injecting. Put in the smoker for 14 hours to 170. Think I’m good for this year.

bocephus thank you. Good thing I had one in the roaster though. Took 14 hours wasn’t done till almost midnight. Guess I got to start it the might before. Used the meatstick and an inkbird pid on the smoker. At least I was not running back and forth checking the bird and temps.

samspade How big was that bird? I like to not get them more than about 14 pounds for smoking, but did a 16 one of my son’s brought me to go to Folks In Laws as they wanted me to smoke the Buzzard. Have done an over 20 pounder, but those can really take a long time & be tricky.

calldoctoday yeah I just showed the photo to a friend who asked about weight it was 14 lbs. Like everything else the camera adds 10 lbs.

Father in law getting ready to carve the turkey. We raised it and he cooked it. Approx 26lb when we butchered it.
