Dave in AZ I agree with you that it all depends on what you are making. For me, I’ve always been making product for the public and you have to give people what they are expecting. As you allude to in your second point “Johnsonville” style brats are what my past customers were expecting to get. Most of the fresh sausages I made we mixed to be of that consistency/ texture.
What does Willies taste like?

Just wondering what the Willies snack stick seasoning taste like. Is it a pepperoni tasting seasoning? My buddies like the pepperoni tasting sticks, so that’s what I’m looking for.

It’s all I use. Has a good pepperoni flavor and a nice heat level. Try a small test batch and then you can extra spices or pepper to fit your liking.

mdseaside thanks! Just looking for something a little better than the hi cou***y brand we use now. Maybe make some salmon sticks with it. I lived in seaside for awhile.

salmonmaster kinda pepperoni I guess, with a good kick. I pretty much use Willie’s exclusively for snacksticks now, it is good. I’ve rolled my own pepperoni and a few others. But for venison and beef, Willies is a great flavor.

salmonmaster Willie's Snack Stick Seasoning is the best selling snack stick seasoning we have. It’s not the one that I get the most pumped up to make or eat but it IS the one I want to eat the most…if that makes any sense? There is somewhat of a pepperoni flavor but a little more pepper than you would expect from a pepperoni.
Also, consider the Willie's Snack Stick Seasoning-MSG with MSG…I really think it has a little more flavor as long as you aren’t sensitive to MSG. The downside to that one is that it only is available in seasoning that is enough to do 100 lb of meat

so what about the pepperoni seasoning from Waltons, does it have a good pepperoni flavor, and would it make a good snack stick without the heat?

salmonmaster I have made the pepperoni into snack sticks once or twice. It works way better with beef for some reason. If using pork/deer then its not close, prefer Willies every time!

Was thinking about splitting my 20#s of deer and pork up using pepperoni excalibur unit ,wondering if it would have any flavor like 30mm smoked tubes I was going to make.
Has anyone made them that way.

tarp Using a different protein is going to change the flavor for sure. Using deer with pork fat (in my mind) is the best way to get the venison taste with good fat content. If you add the lean muscle from pork as well then that has a tendency to come through more than the deer and it tastes like a pork stick with something else in it.

Jonathon If using Willie’s Snack Stick Seasoning with out MSG, wow much msg would you add to “X” pounds of meat to achieve the same flavor boost of “Willie’s” that had msg in the seasoning mix?
