chippewa We think it is really good too & like the flavor. The heat is not so much though as we originally thought from the name & not even as much as some others that really do not mention any heat other than bold, but very good.

Jamieson22 I started 130* no smoke for 30 minutes added 1/2 tube of smoke and raised temp to 140* and rotated tray’s every 1 1/2 hours and raised temp to 180* after 2 hours. The just kept rotating and checking pieces for being done. Took around 5-6 hours.

chippewa We start ours in the smoker for 3-4 hours, then move it to the dehydrator at 165° to finish. It turns out real good & Sweet Chipotle is a Favorite as is Walton’s Bold.

chippewa What would you say, 10%, 15% add on the jerky seasoning mix to make summer sausage?

Denny O I would add between 15-20% more. Since they are for 25# batches I usually make 1/2 or the full batch. So for 1/2 I would have 10# of meat and use seasoning for 12 1/2#. And add a little extra chipotle powder. But that is just my humble opinion.

Denny O I have not tried it on the summer sausage. It was just a suggestion of what I would do.

Denny O So, there is a danger there that adding more will give you a salty product. I’d recommend a smaller batch before going up by 15%
