Here is a recipe for how I make this Greek sauce that you eat on gyros. You can vary any of the spices to taste, or yogurt to cucumber ratio. These amounts will get you in ballpark. Greek yogurt is just regular yogurt that is sat in a cheese cloth or tea towel for a few hours and strained, allowing the whey to drip out and make it thicker. I save the whey to use as buttermilk for pancakes etc. Below you can see the 1 gallon strainer I got on Amazo n , and 1 gal of yogurt split into strained greek yogurt and 2quarts of whey/yogurt. You can see how thick it was scooped right out of Instant pot incubator, so you cannimagine how thick it is with 2 qt of whey removed!
2c thick strained “Greek yogurt”.
1 cucumber, diced fine or shredded. Remove center watery seeds part first
3 cloves garlic, minced
1t salt
Juice half lemon, 1 to 2 T
1 T good olive oil
1 t dill leaves
1/2t pepperMix, allow to sit a bit for flavors to blend. Eat alone as a side salad, or as sauce on gyros etc.

Dave in AZ Dated a greek (Cyprus) in college, she put Fetta on everything and it made me hate fetta, however, Tzatziki sauce was delicious on the falafel that the dude in our dining hall made. She did NOT get along with that guy, to call her a firebrand would be massively underselling it. When she and I broke up it was 2-3 years until I had anything other than a casual relationship, I needed a break from crazy! Oversharing, sorry!
