Ridley Acres Those look really good.
Did you just squirt them out on a sheet and cut to length with a knife?
I have been trying to envision the best way of how to do this.
-
processhead I have a foot pedal on my grinder because my grandson has to much going on to help me with the crank stuffer so I used the grinder and when they get the size of my hand I cot them off at the tube lay them on deli paper and freez them to vacum seal tomorrow

processhead I have seen molds to make caseless breakfast sausage, but I think using a stuffer with the tube size you want would be just as good and faster. I think I would run them out on a cookie sheet with parchment paper, slightly freeze and then cut to length then freeze and vacuum seal.
-
bocephus I am sure that would work tp

gus4416 Looks great. I’m starting to do more and more caseless sausage myself, for breakfast sausage and like those gyro meat ones I made, so much easier and I like the Browning better. Nice job!
-
gus4416 Looks great and I am sure it will eat well too! If your grandson is too busy to help, maybe he is too busy to taste! No, I remember being too busy with nonsense when I was a kid to do cool things with the older people in my family. He will wake up one day and realize time spent with you will be fart better than time spent chasing girls!

gus4416 I’m interested in more of your pics as you lay them out on the jelly roll sheet trays.

gus4416 Yours look very good. Now I am thinking about getting some pork out and making links, I like them better than patties, easier to cook I think.

gus4416 I do the same thing with the jerky cannon and the blue ribbon seasoning, I think.
-
Denny O when coming out of the grinder when they are as wide as my hand I cot them off the pan is SS with a rack on the rack is deli paper I hope they don’t stick last time I used parchment paper then I just put them in the freezer over night so I can vacuum seal them without crushing them when I un freeze them I cut the bag to let air in so they don’t crush when unthawing

gus4416 I fry mine while still frozen. I treat them as “little sizzlers” breakfast sausages.
-
Denny O I will have to try that
