for 5 lbs. of meat 10.6 oz. of seasoning, 1 1/4 tsp sure cure, 8 oz. water. Per pound of meat measurements 2.12 oz. of seasoning, 1/4 tsp of sure cure, 1.6 oz. water. Mix the seasoning and sure cure together well before applying to the meat.

Denny O I agree that Maytag is by far the best blue cheese there is. Only trouble is the price has gotten so crazy for it. I used to buy a 2# wheel every year to split with my Dad and it was $50 with shipping. Now just the cheese is $70 plus shipping!

Denny O You are 100% accurate. Had never heard of it until two years ago. Now I’m addicted. Have a two pound wheel coming right now. Hope what I have left lasts that long. It freezes really well so always have some in the freezer.
