Gipper Personal preferences, try it both ways to see what you like. In this instance theres really no wrong way. When I worked processing wild game we put hamburger seasoning in burger before packaging.

I have found the patties to be a little more than 1/3 pound depending on how tight you stuff them. It works fast once you get the hang of it

Bought one in November butchered a steer in January used the patty maker on fresh 90/10 ground beef. Patties came out 1/2 lb. Cook good
