Just trying to see whats best for salami. I have the cotto salami seasoning and mixing into elk and pork fat. Looking for others input on do you let your stuffed casings sit overnight in fridge or can you put them in smoker when your done stuffing?..whats better thanks …

Standard procedure for any sausage with added cure is to let sit overnight in the frig after stuffing to allow the cure to work.
The exception is when you also use a cure accelerator like ECA or Sodium Erythorbate, in which case the sausage can be smoked immediately after stuffing.
