Yep mineral oil is just fine, I don’t use it to store my equipment, or any oil in that regard but I do use it on the plate to knife contact, and auger contact point to grinder at start up of grinding. I also use it on my seals for the smoker to keep them pliable and from sticking, as well as the foam sealing sections on the vacuum sealer
PaPaSmokes
I use a food grade silicon spray.

PaPaSmokes This^^^^
I use carbon steel knives and plates (resharpenable) and coat them with white food grade oil for storage in ziplock bags.
Since a lot of my processing equipment is vintage, and cast iron, I need to keep it oiled up while not in use or it will start to rust almost as soon as I get it washed and dried.
PaPaSmokes That should work, just a light coating and package them together. I use the Walton’s white oil to store and to lube plates knives and grinder shaft on initial start up.
PaPaSmokes I’ve used white oil for my equipment for maybe two years. My stuff has long periods of inactivity and I’ve had no problems yet
PaPaSmokes I use Walton’s white oil. It works great.
I use some of that food grade silicone spray that L*M sells I believe some here call it wd-40. I also roll up my plates and knives with something in between them to keep them from scaring each other in a bag.
That white oil works great. I keep it in a spray bottle to make it a little easier to apply a good amount (and then wipe all around with a paper towel).
Don’t use vegetable oil. It will gum up on you. That causes all sorts of problems, only the least of which is that it will be a mess.

Exactly this.
I bought a used meat slicer that had been repeatedly oiled with vegetable oil. Gosh that was so hard to clean it looked like tree sap.
