Gator sausage

I had a friend give me 3 # of gator meat that was 3 years old but well preserved. I mixed it with pork and made smoked sausage. Came out pretty good. Not my best but edible. lol
I will post recipe later.

chippewa I’ve had Gator jerky and it wasn’t bad. I’d like to try it fresh cooked and smoked just out of curiosity.

gus4416 I had it grilled wrapped in bacon and it was good. This was good but not great. I think it would have been better if I left it fresh and not smoked it.

chippewa That is pretty awesome! We got some gator meat once for a podcast, I don’t think it was very well preserved because it didn’t taste great. I’ve had gator down in texas that was delicious though, so I know it can be good. Really nice color on those sausages!

Mine was pre tenderized and It has a unique smell and taste. Kind of a fishy pork. I had a another friend give me some gator sausage and it had the same taste and kind of almost grainy like texture

I’ve seen plenty of gator/pork sausage here in Louisiana. A sausage poboy made with alligator is sold at the Superdome in New Orleans and it is actually very tasty. Have not seen a sausage with just alligator (no pork), but if one was made, it would be ok to eat on meatless Lenten Fridays as the Archbishop of New Orleans recently clarified that alligator is not meat…

I have made pastrami from a gator we killed. Took some in our luggage to visit wife’s sister and husband doing a missionary duty in Nepal. Likely the only gator meat in Katmandu!
Little seasoning and throw it on the Blackstone is good also.
If you like to fish and like to hunt go gator hunting. It is both combined, along with skeeters and snakes and all other things that live down south in the summer nights. Great fun, 11 yo grand daughter enjoyed a night of it with us last season. -
