jfyoung45 Pineapple denatures meat at temperatures below 160 degrees, (especially chicken and pork for some reason faster) and the enzymes become inactive as the temperature rises above 160 degrees. It is an enzyme known as a protease which is a type of enzyme that breaks peptide bonds in proteins. As I said before, it will eat your casing when used un-processed and ruin your product, I researched this pretty hard when I had problems with my sausages using pineapple products other than those processed beyond 160 degrees.

Hey, guys just wondering what kind of prices you all are seeing for pork bellies currently. I’m going to be doing 50#s of belly bacon for my brother in law here soon and just wanted to get an idea of what everyone else is paying.

I bought a case for $3.29 a pound a couple months ago. Local grocery store had a special. That is as cheap as they are here. They are $5.99 a pound from my local locker.

When compared to all the other primals from a hog, I think the belly is still the highest price per lb cut on the pig.
This is where all the work of butchering your own hog starts to pay some dividends. I think with our recent hog it penciled out to about .97 per pound for everything edible that went in the freezer.

I wish I knew more about the economics that affect commodity retail price variations like the belly prices we are comparing here.
I think about all the hogs that are raised and processed in the Midwest and then see retail store prices that are as high or higher than average prices elsewhere. Apparently transportation costs are not much of a factor if you can get cheap pork bellies in Washington? -

processhead We have an IBP pork and beef processing plant here in Washington, they do raise a lot of pork here as well. The prices vary with the sources here. Costco was selling prime brisket packers for $3.09 lb. on Monday when I was there. If I had the space in the freezer, I might have bought a couple. The 88/12 ground beef was going for $4.99, no rhyme or reason
