I’m looking at making some snack sticks with 5# 73-27 hamburger and about 5# of venison. Would that be enough fat content for the mix?
Any other thought?
dhg001 You’d be around 13% fat at that point so pretty thin on the fat. Generally, you want to be up at 20% or more for best results. Can you get your hands on about 2 lb of pork fat? That would be the best way to do it.
