gus4416 Jerky cannon squirt out strips onto a parchment paper lined jelly roll pan next to each other. Prescore into lengths, freeze the multiple pans of the sausage. Recut into portion sizes with the parchment paper attached and vacuum the portions back to back.

Tex_77 Actually I am not a fan of maple in pan sausage, is the Holly a traditional breakfast sausage without any maple flavoring?

HerbcoFood I’m only just now after 69 years, warming up to maple. BUT the maple has to be “pure”!
Holly has no maple flavor in my taste buds. Holly is my go to for little sizzlers. -

For those of you that have used hi mountain - Prairie Sage Breakfast Sausage Seasoning, what Walton’s breakfast sausage seasoning is the nearest?
-
Denny O Now, I have never tried the Hi Mountain but comparing ingredients
Prarie - Salt, red pepper, sage, black pepper, spice extractives, and citric acid (0.01%) added to protect flavor.
I found 2 that are pretty close:
1504 Pork Sausage Seasoning Salt, Sage, Sugar, Red Pepper, Black Pepper, Dextrose, Natural Spice Extractives, Citric Acid (0.0625%), BHT (0.0625%).
and
#10 Pork Sausage Seasoning Salt, Spices (Including Black and Red Pepper), Dextrose, Monosodium Glutamate, Spice Extractives, Citric Acid (0.031%), BHT (0.031%). -
Actually, take that #10 out, it doesnt say sage anywhere.
