Snack Sticks

When making snack sticks would it be OK to mix some ground pork with the ground beef & if so what ratio would you suggest. Thanks in advance.

journeyman1955 Absolutely you could do that! A lot of snack sticks are a mix or just straight pork so adding some won’t cause you any issues. In fact, I think it will make it a better finished product!

Thanks for the response. Would a 60% beef, 40% pork be a good starting point providing both are an 80/20 ratio?

journeyman1955 Yup, that would be perfectly fine, personally, I’d try to add just a bit more fat to them, somewhere in the 75-25 range. If you don’t want to do that then I would consider adding a Binder to help with the meat binding and the consistency. Either way though the 80/20 will still get you there!

I make summer sausage all the time at a 60% beef 40 % pork ratio and it comes out great
