      After the turkey raviolis were so well received, I decided to try my hand at some wontons so I used some more of the turkey leftovers and made a wonton filling and made an egg flower soup with home made wontons .

      I can’t recall who mentioned Meatloaf the other day but that started the craving for meatloaf sandwiches.

      I ground the brisket cuts that I saved from my last smoked brisket as well as some cuttings from some Boston Butts. I purchased and added ground veal. The bacon is something my gf picked up and we had it in the freezer so I left it out to thaw while I ground the meats and tended to the Yukon Gold taters.

      What a whirlwind weekend. I did get to put some ribs on the GMG smoker and I am quite pleased with how well they turned out. I hope y’all enjoy the photos.

      Dinner was smoked ribs with corn ribs and mac & chez with a few different cheeses. GF was kind enough to ply me with a delicious and spicy Bloody Mary.

      I think the Apple Juice spritz is money.

      Got smoke ring!!!

      Side note, my PS Seasonings arrived today so it is time to start prepping to make some jerky. I need to clean up my smoker too.

      I smoked 2 < 14# turkeys on the GMG and had tons of left overs. I made raviolis stuffed with ground turkey. ricotta and spinach and covered them in a nice garlic, basil ragu. The gf was blown away. I am quite pleased with how it turned out.

      Continuing with the theme of using up leftover turkey, I thawed out a breast and 2 legs and cleaned them and then grinded the meat and made an Italian themed filling.

      I made stuffed shells with the filling and for dessert, I stuffed some raspberries with nutella and then a warm vanilla creme anglaise to drizzle over the raspberries.

      Cooking is my artistic outlet. I would call my driving artistic as well but the local constabulary would state otherwise.

      cut the tip and tail off so it would stand upright and then bisected into quarter slices. Once you eat corn ribs, you will prefer that manner of eating corn on the cob from then on out. I’ve done Elotes style and it is bonkers good.

      I am being worked up for a TKR (Total Knee Replacement) and this has put a serious hamper on my wild protein harvest. The GF and I were going to go to Idaho for Speed Goat. Stay local for deer and RMElk in Eastern OR, and Roosevelt Elk in Western OR.

      Waiting on suppressor to round out this build.

      No snack sticks for me until next fall seasons roll around.

      Surg I’d say the 375º would be if roasted in the oven v smoked on a smoker. Not sure if you are using a pellet smoker, but if so, run it at 180-220º for the first 2 hours to set in your smoke ring and then turn up to (my preference smoke temp) 265º.

      Anxious to see photos of your dish.
