I am new to sausage making and have achieved acceptable results for most of my family. My daughter-in-law (aka bonus daughter) is a life long vegetarian and I would like to make her some homemade “sausage”. Recipes abound for the filling but I have problems finding casings with no animal products in them. The only ones I have found are the fiberous casings but the smallest one is 1.5 inch. Does anyone know of a Vegan sausage casing in the 21 - 32 mm range?
Also, does anyone have any good recipes for vegetarian sausage filling that they would be willing to share?
I realize that I am speaking sacrilege bringing this subject up on this forum but this is the only place I can imagine finding the answers.
