Ridley Acres Yeah that “wheel of destiny” missing is because I am trying to do too many things at once and I am …well if we want to be mean then dumb but if we want to polite, I get confused easily! Should be working now, if it is still showing the monthly at the bottom too hold down Ctrl and hit refresh on your browser, should release the cache. Thanks for catching that!

Dave in AZ I’ve done whole muscle with vegetable glycerin in the past, I liked it. Very slight after taste but nothing to make me not use it again in the future. Do you have a specific type you like?

Denny O So, there is a danger there that adding more will give you a salty product. I’d recommend a smaller batch before going up by 15%

Sydik Farms Have you tried following this yet? https://meatgistics.waltons.com/topic/625/how-to-make-restructured-jerky-recipe If not, go with that, it makes good jerky that isn’t too tough. Also, in my opinion, do it in a smoker not a dehydrator.

salmonmaster Yeah, it was tender, I pulled it when he IT was around 170 if memory serves me. One of those things that I thought I could get it in the smoker earlier than I actually could.
Big one is a Boerboel also known as a South African Mastiff. If that is the dog I can’t recommend them highly enough, awesome, loyal, and funny, but don’t expect them to like strangers or always want to listen, VERY stubborn. The little guy is mix of Staffy and American build go, mostly Staffordshire, he was a rescue but he’s a good boy too other than he eats my doors.

RafterW The government doesn’t have money, they have our money. So no matter what they are doing with it, it should be transparent. I remember 2008 when we were told that the bailouts would come with stipulations and regulations. Then they used that money to lobby politicians to prevent that from happening and we got nothing. Not getting political here but those names should be public information.

hunters stick The higher you can get the relative humidity the quicker you can get through the stall, as higher humidity will make it harder for the water to evaporate off of the surface of your snack sticks meaning it won’t be able to cool itself efficiently and you will get the temp up quicker.

processhead Nope, we don’t have those, that must be an old image that has been in the catalog for a long time. My guess is that is an old hydraulic stuffer tube because the new vacuum and hydraulic ones are all tapered slightly. Thanks for spotting that, we have a ticket open to remove it from the upcoming one.

hunters stick You can add automotive sponges to a water pan and leave them standing up so as much of it is sticking out as possible. This increases the surface area for evaporation and increases the relative humidity. Or you can also use a wicking towel, that you drape out of the pan, this works a little better but you need to have something below the pan to prevent it from dropping water on the bottom if you have an electric coil at the bottom. We will have a towel for this in 2023 at some poiunt
