I ended up with two 12 1/2lb batches one was a pepperoni blend with 1lb of mozzarella added and the other “Cody’s” snack sticks with 1lb of pepper jack. Both were 70/30 pork butt. My favorite way to eat them birds either that or salmi also.

When I get back home I’ll look at the spice mix I used we thought it was phenomenal and the mozzarella was a good choice I think.

Just recalling as I’m home now. If anyone was interested it was Hi-Country pepperoni seasoning I used.
