Thanks Jonathon. Didn’t think about the opposite effects on pH of the cold phosphate and the encapsulated citric acid. That makes sense. 50 lbs of snack sticks down and 25 more to go!

Smoking snack sticks horizontal
Most seem to smoke their snack sticks hanging vertical over dowels. Is there any disadvantage to smoking them horizontal on the smoker racks?

Planning on making a 25 lb batch of Mountain Goat Chorizo 50/50 with untrimmed pork butt. for those who have tried both, do you prefer the regular chorizo or the Mexi-chorizo? Looking for authentic Mexican style chorizo. Also, we plan to stuff some, what would be the best collagen casings.
