Hi I am Bob from Santa Barbara CA… I have been making jerky for sometime. I have an electric Masterbuilt Smoker. My sons just gave me a L*m Canon to make snack sticks. That want me to figure out how to make a good pepperoni snack stick. Looking around I found this website and very interested on how to make sticks. After a while would like to upgrade to grinders mixers and stuffers.
My concern about buying a premade seasoning is that most always very salty outcome. Has anyone tried the W Pepperoni seasoning. Since I am new to snack sticks did not know about binders. Has anyone used the carrot binder? I will be making small batches with a jerky gun. Should I use the encapsulated acid, is it a good thing. I just don’t want anyone getting sick.
