I cooked/Fried for 120 people this past weekend. I was way too busy to take photos. The menu, Atlantic Cod, hush puppies both corn only and with jolopino’s. Fires, corn on the cob, and a 130 year old recipe for a vinegar base slaw. (That everyone wants) lol. Not going to get it.
I used middle of the road oil for frying, no complaints.
My fryer is a cajon cooker 8.5 gallon. No burning of food particles in the bottom half. I did filter the oil after with out any off putting odors.
My question, after that menu, heavy with fish, what can I fry in this again? -

twilliams , I agree with the oil challenge. My go to oil has more than doubled in price. Oil is the most expensive condiment we purchase. Frying in low quality oil will make our food taste sub par. High quality oil may be out of reach for a lot of us. I does make a difference. I have a big event coming up next weekend. I think we can collectively make comparisons. I don’t know if this could be another thread but I believe this could help the whole community if we can share notes.

I’m frustrated. I took a pic to try and post it. Nothing elaborate, just some brats on the grill. Sometimes I just want to post a pic of a big bowl of popcorn to keep it real.

That exact thing happened to me and I found the burper was tighten down. I loosened it and never experienced this again.
