      Dave in AZ I have to second that!!! This platform has so much to learn from. I fumbled so many times in the past, but now are producing quality products. Sharing information on all sorts of topics, if you can’t learn something here, you must have a Doctorate in food or life. I absolutely enjoy this and it will always continue to educate and entertain. Thanks for everything that Waltons does.

      kyle That can keep us busy. I can’t imagine the spring without the stress. Worried about weather and the critters. The bounty with canning or preserving is worth all the effort. I try to up my game with growing every year. Like finding your favorite sausage recipe.

      I cooked/Fried for 120 people this past weekend. I was way too busy to take photos. The menu, Atlantic Cod, hush puppies both corn only and with jolopino’s. Fires, corn on the cob, and a 130 year old recipe for a vinegar base slaw. (That everyone wants) lol. Not going to get it.
      I used middle of the road oil for frying, no complaints.
      My fryer is a cajon cooker 8.5 gallon. No burning of food particles in the bottom half. I did filter the oil after with out any off putting odors.
      My question, after that menu, heavy with fish, what can I fry in this again?

      Jonathon Me too with the coffee, I don’t know why. I called it lifer juice, started drinking coffee along with other things in the Marine Corps lol. I haven’t had a drop of coffee in 5 months, can’t say that about the other “things” lol.
