      calldoctoday She was only over there for a semester of undergrad school about 6 years ago. She did enjoy her semester in Galway. Her and a cousin where able to travel on the weekends to several European countries because air fares from Dublin were very cheap.

      calldoctoday I started at 120° at 8:10. After 30 mins bumped it up to 135° for 30 mins. Then 150° for 30 mins and 165° for 30 mins. Kicked it up to 180° at 10:11 MST this morning. As of now I’m up to 133° IT. Independent probe shows smoker temp is running fairly consistent. Air temp is -1° so that’s slows things down a bit.

      calldoctoday Thanks for the be info. In the video Jonathon recommended that as the final temperature for Canadian bacon. Started at 120° and stepped up to 180°. This is my first attempt, so just want sure on a time line.

      Just curious. About how long will a 8.5 pound loin take to reach 145° IT with the smoker temperature at 180°. Seems to be going slow.

      Jonathon There is a place called The Monument Inn just north of the San Jacinto monument here. It’s all you can eat oysters on the half shell, boiled shrimp and fried catfish. I have only been there one time and that will be the last time, I think… But at the time I was dating an ex-girlfriend, now who I call my wife(see what I did there!), she put down over 5 dozen no problem. I wasn’t sure if I was impressed or grossed out.

      calldoctoday About six years ago we went to Ireland to help our daughter get settled in for a semester of study abroad. She helped teach at a Catholic grade school in Galway. Then from there the wife and I took a bus tour vacation around Ireland. It’s a beautiful country with some of the nicest people you would ever want to meet. Our bus driver and guide was very knowledgeable on Irish history and a funny guy. Although he was a little full of it because according to him the Irish invented everything. The pubs always had good Irish bands and usually traditional Irish dancing. If you like French fries (Chips) they’re perfectly cooked wherever you go. The only negative was it was unusually warm while we were there and there isn’t an air conditioner to be found and if you ask for ice in your drink they look at you kinda strange. One night at dinner we pleaded with the waitress for ice in our drinks and she asked if someone had an injury. I apologize for the long post.
